Cold storages are used to preserve food items with retention of the original color, flavor and taste for a longer period. However, some items cannot be stored even in a cold storage for indefinite period due to their certain life. Cold storages are being used for preservation of many food products since long. Storage beyond certain period may not be economical as well since payment of rent of cold storage increases the cost of the item. Hence, cold storages are used for high value items or when prices crash down due to bumper crop or for such items which are grown during the season but there is a demand round the year or for products like meat, fish or milk products which are quickly perishable.

A proper market analysis would throw light on storage needs and accordingly tentative plan for the whole year has to be drawn. Compressors suitable for using ammonia have to be selected as ammonia is cheap, easily available and is of high latent heat of evaporation, but it is highly toxic in nature if mixed with oil containing high carbon percentage.

Hence, handling and maintenance has to be very careful. Rooms with different temperature requirements must be properly insulated and protected from moisture. On outside walls, one coating of foam with vapor proof material is advisable. Temperature and humidity is maintained according to the items stored. Use of skewed door arrangements, proper insulation and required circulation of cool air inside the storage area would make operations economical and improve profitability.

Largest cold storage in Mekong Delta has been constructed

On March 9, work commenced on the construction of a 50,000-square-metre cold storage area at the Song Hau Industrial Park in the Mekong Delta province of Hau Giang.

As the largest cold storage building for aquatic products in the region, the new facility will be a part of the Cuu Long Port and Logistics project invested by Minh Phu Group and the Gem adept Company.

The project is funded through an investment of 300 billion VND (14.1 million USD).

The storage facility has been designed to meet the strictest standards of frozen aquatic product preservation and use foreign advanced technologies.

The Cuu Long Port and Logistics project, covering 30 hectares, will cost a total of 1 trillion VND (47 million USD).

The Mekong Delta is a major aquaculture region with 800,000 hectares of water surface dedicated to the purpose, not to mention sea catches.

The aquaculture products industry targets an output of 3.7 million tones to meet the demand of 198 local processing plants in the region this year.

Vai trò của bảo quản lạnh với giống cây trồng là không thể phủ nhận. Nhiệt độ bảo quản càng lạnh, thời gian bảo quản càng lâu. Điều kiện càng lạnh thì sẽ càng hạn chế được sự trao đổi chất của hạt và hoạt động của enzim làm hạn chế sự nảy mầm của hạt Theo nghiên cứu, tỷ lệ nảy mầm của giống phụ thuộc rất nhiều vào quá trình bảo quản. Nếu bảo quản bằng kho lạnh 12 độ C thì sau 12 tháng tỷ lệ nảy mầm vẫn đạt 95,6%, màu sắc vỏ ít bị biến đổi. Nếu bảo quản kín trong phòng thì sau 6 tháng tỷ lệ nảy mầm đạt 89,5%, sau 8 tháng đạt 76,1%, nhưng nếu để từ 9 – 12 tháng thì tỷ lệ nảy mầm giảm mạnh còn khoảng 50%.
